Roasted Root Vegetable Side Dish




Serves 2-4

Ingredients:
  1. 1-2 large carrots
  2. 1-2 medium parsnips
  3. 1-2 sweet potatoes
  4. 1-2 Tablespoons olive oil
  5. 1/4-1/2 teaspoon garlic powder
  6. 1/8-1/4 teaspoon rosemary
  7. 1/8-1/4 teaspoon Italian spices
  8. Sprinkle of paprika
  9. Salt & Pepper to taste
Directions:
  • Preheat oven to 425 degrees. 
  • Cut sweet potatoes, carrots, and parsnips into 1/2 inch chunks.  Place into a roasting pan.  
  • Drizzle with olive oil and spices.  Toss until all pieces are coated.
  • Bake for 15-20 minutes.  Flip the vegetables and cook for another 15-20 minutes.
 ~This side goes great with chicken, steak,  fish or pork~
